Alright lovlies, I promised you all an awesome veggie recipe.
My bf makes it and then I eat it.
Gazpacho, is basically a cold soup. It's made up of just veggie's so its super duper good for you. It can be an acquired taste, but you can spice to your liking. We make it usually during this time of year to help get some more energy and revive ourselves during hibernation.

Chop all of your vegetables and place in a large bowl.
1 red pepper
1 green pepper
1 english cucumber
4 stalks of celery
1 large onion
4 cloves of garlic
puree in batches in food processor or blender
place all pureed vegetables in a large pot or bowl
when done add one large can of tomato juice
A few drops of Worcestershire sauce
Tabasco to taste
dash of cayenne pepper
Refrigerate, soup will become hotter as it sits in the fridge
good for about 5-7 days
